Low Fat/Lower Calorie Banana Bread

2 1/4 c. whole wheat flour
1 c. sugar
½ c Splenda sugar replacement
1 tsp. salt
1 1/4 tsp. baking powder
1 1/4 tsp. soda
2/3 c. skim milk
1/2 c. plain nonfat yogurt
2 tbsp. unsweetened applesauce
2/3 c. egg whites or egg beaters
1 1/2 c. mashed ripe bananas
1 tsp. vanilla
1 tsp. cinnamon (or to taste)

Heat oven to 350 degrees. Measure all ingredients into large mixer bowl and blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into either 2 loaf pans or 1 square baking pan. Bake 50 minutes to 1 hour or until wooden pick inserted in center comes out clean.

  1. Good post, but I think this is worth reading in here a lot of information on the content of nutrients in bananas.
